Frozen Chocolate Covered Banana Bites


Okay, I'm not going to comment on the snow or the -37º temperature because I'm sure your eyeballs have already jumped out of their sockets to escape the annoyingly huge number of weather related posts that you've been forced to look at all week.

Well pick those eyeballs up off the floor. You're gonna need them for this.




No, it's never too cold for a frozen treat. Not when it involves chocolate and peanut butter and sprinkles. I seriously cannot even tell you the number of bananas in this house that have been the victims of death by chocolate immersion. Or maybe death isn't the right word. Salvation?



I don't know about you guys, but I require chocolate and/or ice cream after every meal to sustain my existence. It doesn't take much, just enough to get the that healthy taste out of your mouth. These frozen banana bites fit the bill exactly.



Of course we've all had a good old frozen banana before, but these bite sized ones are way better. Not only is there more surface area for the chocolate to cling to, but they also are the perfect size for your after dinner munching. Just keep them in a plastic bag in the freezer and grab one (or five) whenever your chocolate attack strikes.


I like to add a little peanut butter to the melted chocolate, but I've also used dark chocolate and then sprinkled them with sea salt or just plain milk chocolate and sprinkled them with coconut, toffee bits, or nuts. The possibilities are endless. For this batch I drizzled half of them with melted peanut butter chips and half of them I sprinkled with sprinkles.


I like to use a fork to dip them in. Then you can just shake off the extra chocolate.


That's all there is to it. After a quick visit to the freezer, you'll have a good emergency stash of little frozen bananas that will satisfy any ice cream or chocolate craving in a jiffy while still being healthy enough for every day use.

    • Frozen Chocolate Covered Banana Bites

    • 1 cup or 8 oz. chopped baking chocolate (or chocolate chips)
    • 1/4 cup peanut butter (optional)
    • 2-5 bananas (depending on how thin you slice them and how much chocolate you put on each one)
    • Sprinkles, melted peanut butter chips, melted white chocolate, chopped nuts, coconut, toffee bits, sea salt, etc. for sprinkling on top (optional)


    • Melt the chocolate (and peanut butter if using). If you are using chocolate chips instead of baking chocolate and you are melting them in the microwave, make sure you turn your microwave power down to about 50% and stir ever 30 seconds. 
    • Slice up the bananas and dip each slice in the melted chocolate with a fork, shaking off the excess. Place on ungreased parchment paper. Sprinkle with any desired topping and freeze in the freezer. Once solid, place in a plastic baggie and keep in the freezer. They keep for about as long as ice cream would keep in the freezer.
